Cinco De Mayo





Well happy Cinco De Mayo friends and family! I hope you enjoyed your day as much as we did.  Chris and I (and Zoe) were invited to two different events today.  First, swimming and a taco bar at Chris's aunt's followed by "Cinco de Perro", a dog birthday hosted by our good friends Reilly & Cecily and of course the doggie of the hour Maebe. 

I decided to bring a dish to both events, so of course my morning started out in the kitchen.  On the menu for today, queso blanco & dulce de leche ice cream.  The night before I prepared the dulce de leche by boiling a can of condensed milk submerged in water for 3 hours.  Then I prepared the custard with 3/4 of the can of dulce de leche and let it cool in the fridge overnight (I used Emeril's recipe). In the morning I popped it in my ice cream maker and then in the freezer to harden for the party!


For the queso blanco I used left over spicy hamburgers (hamburger meat, salt, pepper, cajun seasoning) I had made for dinner the night before, 2 cans of Rotel, and a block of Velveta Queso Blanco. Put all of the ingredients into the crockpot and done.  Super easy and a big hit at parties!
